Have plenty of pictures of the actual SP Daylight cars. But don't remember any of this silver livery nor the bonus gray livery. During what time period and on what routes were they used?

About the exact period for the silver i don't know but
when the rust on the structures of the cars began to be a big problem the stainless steel fluting was removed and flat panels were installed. On many of the cars in your set they used stainless steel panels that were very shiny on the sides, but not on the doors or the skirts on the ends of the cars. Some had shiny stainless steel above and below the windows but the window band was soft steel painted mat grey

The "Sunset scheme" (silver, with red stripe), was first used when The Sunset Limited equipment was pruchased from Budd, in 1950. In about 1958, as the Daylight fleet was being rehabbed due to rust damage, the decision was made to standardize the passenger fleet in the Sunset scheme. The two tone grey was first used when the Lark was streamlined in 1940 or'41. Later, around 1950 or so, the heavyweight fleet was converted from Pullman Green to two tone grey. The Lark remained in grey until it, too, was converted to the Sunset scheme. UP Overland yellow may have lasted on some cars until AMTRAK day in 1971. Hope this helps, AA, born and raised in SP territory on the Coast Line.
